A fragment of the Garden of Remembering

Makes miscellaneous cake loaves. Zucchini bread etc.

Ingredients

  • 5 cups flour
  • 3 cups sugar
  • 4 teaspoons baking powder
  • 1 teaspoon baking soda
  • .5 teaspoons salt
  • 1 teaspoon cinnamon
  • .5 teaspoon ginger
  • 4 cups grated zucchini or whatever
  • 1 cup oil
  • 4 eggs
  • 2 teaspoons lemon juice (optional)
  • swirl of molasses (optional)
  • ~1 cup water

Directions

  1. Heat oven to 350F. Grease 2 9x5x3 pans.
  2. Mix dry ingredients. Mix zucchini with liquids and however much water feels appropriate for sogginess of zucchini; stir into dry mixture.
  3. Pour batter into pans. Bake ~60 minutes until wooden pick inserted in centre comes out clean. Or it starts to burn.


Half recipe, alternate

  • 2.5 flour
  • 1.5 sugar
  • 2 tsp baking powder
  • .5 tsp baking soda
  • .5 cup butter
  • 2 eggs
  • 2 teaspoons lemon juice
  • 2 cups mango juice (or 2.5 pulp)
  • 1 tsp vanilla
